This one is from my native Iowa, something my father always cooked during the summer.

Take thick-cut, fat-back bacon (close to Cantonese style), chop it up and fry it into a big pan.

Throw in Missouri Wonder and/or Tennessee Wonder shell beans (the big ones with purple spots), cook for a while.

Then throw in fresh-cut green beans direct from the garden.

Add some salt.

Eat with batter-fried catfish that you caught in the Nodaway River that morning. This is food fit for the gods.
